Bachelor of Biological Sciences and Doctor of Food Science and Technology. Professor of the UPV / EHU where teaches in degree "quality management and food safety" and "food sensory analysis" in three official masters. Director of the master in "Innovative Oenology" since its implementation in 2010-11, official postgraduate that since 2016 has a double master agreement with the University of Bordeaux.

Since its origin in 2000, he is responsible for LASEHU, a sensory laboratory accredited by ENAC since 2005, where are developed activities for improvement and control of official sensory quality of Basque agri-food products, such as Idiazabal cheese, txakolis from Bizkaia, Getaria and Araba, or Rioja Alavesa wine. In addition, LASEHU develops research, transfer and formation projects to the food sector. Since its origin, he is a researcher at the Lactiker Group, a Consolidated Research Group of the Basque University System.

In recent years, he has contributed to the growth of sensory science in Spain, collaborating with ENAC, organizing the Eurosense congress in Vitoria-Gasteiz in 2010 and promoting the constitution of AEPAS and its subsequent development as President. Representative of AEPAS in the constitution of the European Sensory Science Society (E3S), member of the initial steering committee, delegate of AEPAS and coordinator of the DOP Working Group at E3S.
